The Culinary Institute of America (CIA) was founded after WWII as a vocational training school for returning vets to learn renumerative skills. Now with three American satellite campuses as well as one in Singapore, it’s a full blown accredited university, cranking out associate, undergraduate and graduate level students who not only know how to cook multiple cuisines, but how to manage inventory, create a menu, run a restaurant, and hire employees. With thousands of students and faculty in Hyde Park, this city is foodie heaven. There are four high demand restaurants run by students and faculty on campus. Advance reservations are a must.
- The stunning campus is set on 170 acres in the Hudson Valley, which is rich with local produce, fish and game.
- The campus used to be a Jesuit monastery. You can still feel that Catholic vibe in the dining hall.
- This is only a small portion of an enormous wall near the auditorium. The artwork here is so creative!
- STOP! Chefs crossing! The campus has its own enormous herb garden, and an apiary, where bees make fresh honey.
- This sculpture represents the local sturgeon. It’s 12 feet long, made of 700 knives, 400 forks and 600 spoons. Well done, John Sendelbach!
- This campus is just fun. I’m sure it’s a tremendous amount of work, but the students really seem joyful, including our tour guide.
