First the “mezes” or appetizer plates, they bring about 8 different little vegetarian dishes such as eggplant, fava beans, olives, peppers, beans, tomatoes. Second is the main course – chicken or lamb or fish cooked in a tajine (see the women shopping for tajines?) which is a round clay pot with a domed lid.
Third is the main course (yup, another one) and it’s either lamb or chicken or fish (whichever one you didn’t get first).
Fourth is another tajine filled with couscouse and vegetables.
Fifth is dessert, usually phyllo dough or an orange tart.
Sixth comes cookies, and last comes Moroccan tea (very sweet green tea, heavy with fresh mint leaves).
